I've been baking...
An Impossible Pie! If, like me, you're not a baker, but find from time to time that it is unavoidable...then I am here to tell you that this recipe is your new Go To! It's basically a coconut flavoured custard tart. The pic is from Donna Hay, and her recipe is a lemon/coconut impossible pie, and has a few more ingredients. 7 x ingredients and about 4 x steps and you'll be well on way to receiving accolades and requests for more with this one below. Here goes: 4 eggs 3/4 cup sugar 1 cup shredded coconut 1 teaspoon vanilla 2 cups milk 1/2 cup plain flour (substitute for GF Flour if necessary) 40g butter softened   Preheat oven to 180 (this counts as a step!!) Place all ingredients in a bowl and beat 1-2 minutes Pour into a greased pie plate Bake 40-50 minutes until the custard is set Serve with icing sugar dusted on top and a dollop of cream You're welcome! xx
